Part of the Southern Illinois University Farms system, the Sustainability Center is comprised of the student-run Sustainable Vegetable Farm and Greenhouse, a Vermicomposting Center, and the Paper Recycling Project. The farm provides organic vegetables to the Southern Illinois University dining halls.

The 365-acre Shone Farm provides hands-on experience to students in the Sustainable Agriculture and Animal Science Programs. Students produce and sell grass-fed beef, direct market value-added products, and operate a Community Supported Agriculture (CSA) program.
The 1.2 acre Pomona College Organic Farm serves as a site for hands-on education in "various methods of small-scale ecological farming." Students, faculty and staff use the farm for academic studies and have conducted research for thesis projects on sustainability. The farm hosts local school groups and community tours, and offers workshops and events for community members.
An outdoor classroom, Seeds@City Urban Farm, offers hands-on training in sustainable, organic, local and community agriculture.
Acquired in 2018, the Center will be the first at the University to focus on organic farming and organic -certified production systems. The Center "will offer educational programs in organic and sustainalbe agriculture production. Public programs are expected to focus on biological control, pollinators, soil health, native plant landscaping, horticulture organic food processing and marketing, food safety and nutrition." The center includes a certified organic heirloom fruit orchard and produces 68 varieties or apples, eight varieties or pears and eight other types of fruit."
The 300-acre Russell Ranch Sustainable Agriculture Facility is "dedicated to investigating irrigated and dry-land agriculture in a Mediterranean climate." The Century Experiment (formerly known as LTRAS - Long Term Research Agricultural Sustainability) is a long-term, 100-year study implemented in 1993 on the main plots of Russell Ranch. The Experiment also includes the former Sustainable Agriculture Farming Systems (SAFS) research project.
