  1. Assess the food safety training needs of Chinese-speaking foodservice workers in the U.S.
  2. Develop a high quality, two-tier, Chinese-language food safety curriculum for foodservice workers.
  3. Evaluate the effectiveness of the curriculum at increasing knowledge about safe food handling practices practices.

A comprehensive food safety curriculum is not available for Chinese-speaking foodservice workers, a significant, yet mostly ignored, sector of the industry. The purpose of this project is to develop an educational program that addresses the food safety training and certification needs of Chinese-speaking foodservice workers in the U.S.

  1. Conduct a series of focus groups to assess the training needs of both Chinese-speaking foodservice managers and workers.
  2. Conduct food safety training in Chinese for both foodservice managers and foodservice workers.
  3. Develop and/or adapt Chinese-language materials and post online.
  4. Evaluate the effectiveness of all training materials and training programs at improving food safety knowledge and/or practices.
