Objective
(1) Evaluate the bactericidal efficacy of direct and indirect HVACP treatment of spot inoculated LM on a model food (agar with added protein, salt, and fat) to quantify the bacterial kill and injury rate for a range of plasma treatment parameters (voltage, time, gas, humidity). (2) Quantify pathogen reductions for HVACP treatment of LM inoculated QFC stored under refrigeration (4 °C) over 28 days to determine optimum treatment conditions. (3) Examine the microbial condition and quality of QFC over 28 days refrigerated storage following HVACP treatment under optimum conditions determined in Objective 2.
