Objective
(1) Identify additive, synergistic or antagonistic pairings of GRAS antimicrobials (HP, LAE, CA, MC, SC, EPL, BR and ACS) to control L. monocytogenes. (2) Determine the efficacy of GRAS antimicrobial dip treatments to control L. monocytogenes as surface contaminants on high moisture cheese. (3) Determine the efficacy of GRAS antimicrobial coating treatments to control L. monocytogenes as surface contaminants and prevent recontamination of high moisture cheese.​
