  1. Simultaneous determination of aflatoxins, fumonisin B1, T-2 and cyclopiazonic acid in agri-products by immunomagnetic solid-phase extraction coupled with UHPLC-MS/MS

    • Food Chemistry
    • In the present study, a rapid and sensitive determination method of seven mycotoxins was developed using immunomagnetic solid-phase extraction (IMPSE) coupled with UHPLC-MS/MS. Monoclonal antibodies were conjugated with CNBr superparamagnetic beads, and the major parameters affecting the IMPSE efficiency were systematically investigated. Under the optimized conditions, the mycotoxins were purified with the IMSPE procedure within 15 min and simultaneously quantified by UHPLC-MS/MS.

  2. Ultrasensitive microfluidic immunosensor with stir bar enrichment for point-of-care test of Staphylococcus aureus in foods triggered by DNAzyme-assisted click reaction

    • Food Chemistry
    • This work demonstrated an ultrasensitive and simple microfluidic immunosensor for point-of-care test of Staphylococcus aureus (S. aureus) based on the stir bar enrichment and DNAzyme-assisted click reaction. Initially, S. aureus was enriched by the 4-mercaptophenylboronic acid-functionalized stir bar. The yolk antibody (immunoglobulin Y) and copper-labeled polydopamine nanoparticles were then specifically conjugated with the captured target.

  3. Inhibition of CRISPR-Cas12a trans-cleavage by lead (II)-induced G-quadruplex and its analytical application

    • Food Chemistry
    • In this work, the inhibition of clustered regularly interspaced short palindromic repeats (CRISPR) - CRISPR associated protein (Cas) trans-cleavage by Pb2+-induced G-quadruplex has been firstly explored to detect Pb2+ in tea beverage and milk. In absence of Pb2+, the Na+-induced G-quadruplex can be cleaved by CRISPR-Cas12a.

  11. Mitigation effects of high methoxyl pectin on acrylamide formation in the Maillard model system

    • Food Chemistry
    • Author(s): Pengpu Wang, Guoyu Sun, Pei Lu, Yanbing Liu, Yuchen Zhu, Fang Chen Acrylamide (AA) is a potential carcinogen formed during the process of food heating. Pectin is natural food additive widely presented in fruits and vegetables. This study aimed at investigating the influence of the addition of high methoxyl apple pectin (esterification degree: 82.6%) on AA inhibition in the asparagine (Asn)/glucose (Glc) model system.
