Given the importance of cross contamination and the difficulties in determining the extent of cross contamination during food poisoning outbreaks, the projectb objectives were to:
<ol> <li> Analyse, identify and catalogue practices contributing to cross contamination and its prevention within a risk framework
<li> Assess the extent of these practices within food handling
<li> Determine food handlers’ attitudes to these practices and investigate strategies to reduce cross contamination
