Assessing the safety and quality of foods of animal origin

Objective

Objectives:To determine the presence of Salmonella in the major lymph nodes of beef cattle throughout various stages of the feeding process. More specifically, data from this study may also provide insight into Salmonella prevalence differences among previously evaluated south Texas feedyards and the possible influence of management practices at each.To estimate the current prevalence of Salmonella spp. in porcine mandibular and subiliac lymph nodes at slaughter. When Salmonella-positive, Salmonella serotypes and antimicrobial resistance patterns will be identified.To collect and summarize available scientific literature to demonstrate efficacy of various interventions and/or antimicrobials at a range of applicable concentrations.To produce a pictorial scale of fresh beef color.
