Chinese-Language Food Safety Training Program for Food Service Workers

Objective

<ol> <li>Assess the food safety training needs of Chinese-speaking foodservice workers in the U.S.
<li>Develop a high quality, two-tier, Chinese-language food safety curriculum for foodservice workers.
<li>Evaluate the effectiveness of the curriculum at increasing knowledge about safe food handling practices practices.</ol>

More information

A comprehensive food safety curriculum is not available for Chinese-speaking foodservice workers, a significant, yet mostly ignored, sector of the industry. The purpose of this project is to develop an educational program that addresses the food safety training and certification needs of Chinese-speaking foodservice workers in the U.S. <p>
<ol> <li>Conduct a series of focus groups to assess the training needs of both Chinese-speaking foodservice managers and workers.
<li>Conduct food safety training in Chinese for both foodservice managers and foodservice workers.
<li>Develop and/or adapt Chinese-language materials and post online.
<li>Evaluate the effectiveness of all training materials and training programs at improving food safety knowledge and/or practices.</ol>
