Development of a Comprehensive HACCP Technical Support System

The goal of this project is to develop a HACCP technical assistance program for very small meat and poultry processors across the southeast to improve their economic viability. The Cooperative Extension Systems in Kentucky, Tennessee and Alabama will utilize training to educate not only processors, but also county agents and State Department of Agriculture employees in HACCP systems.Emphasis will be placed on local cooperation, use of a regional assistance network, HACCP program development, and updated training materials will be developed and made available both in hard copy and via the internet.
