The objective of this project is to develop educational material for HACCP, GMP's, and related issues for sub-management food handlers working in various food industries. A two-hour curriculum with four learning modules will be developed and utilized in a train-the trainer program for Extension Educators and management level food processing personnel. The curriculum will include an instructor's guide, visuals, interactive activities and a learning guide for the participants.Extension Educators/management level food processing plant personnel teams will then train sub-management level plant employees. To allow for nationwide access, the curriculum will be made available as hard copy and for access on CD-ROM and Internet.
