1. Development of a cost-effective product targeting Enterohemorrhagic Escherichia coli (EHEC) O157:H7, using plant-based expression. 2. Characterization of product and determination of stability in dried biomass in a variety of presentation. 3. Demonstration of in vivo efficacy in prevention of colonization of mice with EHEC O157:H7, via oral delivery of dried biomass. 4. Evaluation of long-term protection against EHEC challenge in mice. 5. Design trial in pigs based on data from mouse models - dosing, challenge criteria, anticipated outcomes, test requirements, monitoring and reporting. 6. Demonstration of product safety as a food additive for swine. 7. Elimination of EHEC shedding in pigs pre-processing. 8. Engagement with the swine processing industry and key regulatory agencies (KTT). 9. Determine the potential for product commercialization.
