Indentification, Assessment, and Delivery of Food Safety Education and Training for Food Service Institutions in the Mississippi Delta

Objective

The objectives of this project are as follows: <OL> <LI>Conduct a comprehensive literature review to identify and assess food safety training needs for institutional and restaurant workers in the Delta counties of Arkansas and Tennessee. <LI>Conduct a comprehensive literature review along with focus groups to determine the best messages, materials, and methods for communicating food safety to hard to reach audience.<LI>Review existing food safety training materials/curricula for institutional and restaurant workers and determine ways that they could be revised for culturally/ ethnic sensitiveness and application. <LI>Conduct two workshops (one in each state) to share findings from the literature review and assess the effectiveness of the adapted training/educational materials with participants. <LI>Recruit and expand stakeholders/collaborators for the next proposal development and submission.</OL>

NON-TECHNICAL SUMMARY: The proposed Identification, Assessment, and Delivery of Food Safety Education and Training for Food Service Institutions in the Mississippi Delta is a two year bridge project involving two institutions, the University of Arkansas at Pine Bluff (UAPB) and Tennessee State University (TSU). The objectives of the project are to conduct literature review on training needs for safe food handling; determine the best messages, methods, curricula, and other food safety teaching and training materials for hard to reach audience; conduct workshops to assess adopted teaching materials; and recruit and expend stakeholders/collaborators for future proposal development and submission.<P>
APPROACH: To achieve objectives 1, 2, and 3, the project team will conduct literature review and analyze secondary data to identifying what was previously been done in food safety educational/training needs assessment for institutional and restaurant workers in the Delta counties of Arkansas and Tennessee in particular and Mississippi Delta in general; identifying current messages, materials, and methods being used to communicate and teach food safety; and reviewing existing training materials and curricula for cultural and ethnic appropriateness. The focus group sessions will help validate specific educational materials for teaching and communicating food safety to hard to reach and ethnic population. To achieve objective 4, one day workshop will be organized and conducted in Arkansas and Tennessee at the end of the literature review and focus group sessions to communicate findings and create opportunity for all stakeholders to evaluate and refine adopted training/educational materials at the same time. To achieve objective 5, potential partners will be invited to attend project meetings and so as the project teams from both UAPB and TSU will visit with potential stakeholders/collaborators in their campuses and other locations mutual to all parties involved.
