The central goal of this work is to develop natural and effective cleaning and sanitation products for meat and poultry processors using our unique enzyme technologies. CinderBio produces enzymes which work optimally in hot acidic conditions that kill most bacteria. Here we will formulate enzymes that degrade the fats and proteins of meat soils and kill bacteria to clean and sanitize meat processing equipment with the combination of heat, acid, and enzymes. We will start with soak-tank applications and quantify the effectiveness of our formulations by scoring microbial counts before and after treatments. We will treat knives, cleavers, meat hooks and cutting boards soiled by use in a meat processing facility. The use of heat and acid loving enzymes promises to displace synthetic chemical use in food processing facilities and provide a natural and effective alternative for meat processing facilities.
