Physiology and Molecular Biology of Clostridium Botulinum

Objective

The overall aim of this project is to conduct fundamental and applied research into aspects of the physiology and molecular biology of Clostridium botulinum. The ultimate aim is to use this information to contribute to the continued safe development of minimally heat processed foods and other foods. <P>
Physiology and molecular biology of spore germination and subsequent events in Clostridium botulinum are being studied with the objective of quantifying the physiological response to environmental stress conditions as spores of Clostridium botulinum germinate and subsequently develop into exponentially growing cells. Intrinsic inter and intra strain variation in the physiological response of non-proteolytic Clostridium botulinum is being studied in order to derive mathematical distribution functions that describe and give predictive distributions of the physiological response to environmental stress conditions.
