Whenever there is an abundant crop of peaches throughout the country, or in a considerable number of the important peach-producing regions, the profitable handling of the fruit is a matter of much concern to the growers. This is especially true if the centers of production are so located with reference to one another that glutted markets are anticipated as inevitable.

In view of the rapid extension of peach culture in recent years into new regions, and with the increasing possibility that conditions unfavorable to the satisfactory marketing of the crop in a fresh state may prevail in some of them during almost any season, the attention of the growers is more and more being turned to the handling of the fruit in other ways. Canning is one of the possibilities first to receive consideration in many instances. The process is simple; it requires but a comparatively small investment, and one season with another it has been in the past a fairly profitable method of utilizing large quantities of fruit.
