The undergraduate certificate is offered by the Department of Environmental Studies in alliance with the Miami-Dade College, Archbold Biological Station's MacArthur Agro-Ecology Research Center (MAERC), and USDA's Agricultural Research Service. The Farmer Training Program is a 6-month intensive program for aspiring farmers and food systems advocates that provides a hands-on, skill-based education in sustainable agriculture. This full-time program offers participants the unique opportunity to manage their own growing site, take classes from professors and expert farmers, and rotate as workers and learners on successful, diverse farms in the Burlington area.

"The Organic Farmer Training Program is a nine-month intensive training program in year-round organic farming focusing on diversified production of vegetables, livestock, flowers, fruits and herbs for local markets." Program includes management of "15 acre certified organic farm including its 20,000 square foot of passive solar greenhouse space and the Student Organic Farm for its primary markets including a 48-week CSA, 7-month on campus farm stand, and sales to campus dinning services."

"The Profitable Small Farms program combines hands-on learning and classroom teaching to develop the skills to start a small farm. The program has a dual focus on the technical skills to produce food sustainably with minimal negative environmental impacts and the entrepreneurial skills to develop and manage a community-based agricultural business. Throughout the program students practice growing food crops and manage small animals on the LBCC student organic farm. Farm-direct marketing is experienced by managing the college CSA (Community Supported Agriculture) program, and selling to the campus restaurants and students and staff at the college farmers' market."
