Student-designed "paths" could include courses on ecological agriculture, permaculture design, and/or the College's Practice of Organic Agriculture course which spans 3 quarters and has both an academic and on-farm component at the Evergreen State College Organic Farm. The course addresses practices in organic farming; running a farm business; and marketing food. One quarter explores "organic food production systems using the three pillars of sustainability - economic, environmental, and social justice." The Evergreen College also has a permaculture site, demonstration site, compost facility, and a biodiesel generation project. Evergreen College does not offer Majors or Minors; students have the options of focusing studies in a particular area and designating that as their area of emphasis.

The Hispanic orchard employee education program (HOEEP) offers seven 19-week certificate programs designed for the Latino workforce in the tree fruit and viticulture industries. Programs include horticulture, integrated pest management, and viticulture.

Students can explore organic and sustainable agriculture, agroecology and environmental sciences at the 25-acre Evergreen State College's Organic Farm. The Organic Farm's Sustainable Agriculture Lab is a hands-on training facility. The farm includes a food-grade laboratory, the student-designed and built Organic Farmhouse, and the student-run Demeter's permaculture demonstration site and Community Gardens. A Community Supported Agriculture program and community-based activities also are available.

The Eggert Family Organic Farm, a 30-acre certified organic farm near the Pullman, WA campus, is operated through the Department of Crop and Soil Sciences. The farm is used for teaching and Extension, and for the WSU scientific community to conduct organic research projects. Students in the Practicum in Organic Agriculture class operate the farm and gain hands-on training in organic production and certification, and in local food marketing.
