The program offers classes that focus on skills needed to run a local farm, annual workshops and educational events. The on-farm apprenticeship program focuses on sustainable, small and mid-scale production. Growing Growers is a collaborative effort between the Kansas State University Research and Extension, University of Missouri Extension, Lincoln University, Kansas Food Circle, Kansas Rural Center, Cultivate Kansas City, and the Kansas Rural Center.

The Department of Plant Sciences offers an M.S. Degree in Plant Sciences and offers a Ph.D. in collaboration with soil science faculty in the Department of Biosystems Engineering and Soil Science, and Entomology and Plant Patholog faculty. Graduate studies and research opportunities in organic and sustainable crop production are available.

The Food Systems curriculum integrates social science, humanities and natural science.  The program "prepares students to address some of the most challenging problems of contemporary food systems, such as building climate change resilience, reducing waste across the supply chain and exploring equitable distribution and fair labor practices."

The nine-credit Sustainable Agriculture Graduate Certificate provides "post-baccalaureate students with an interdisciplinary understanding of practices and current issues in sustainable agriculture...." Elective hands-on internship or practicum.

The Master of Science in Horticulture with an Emphasis on Organic and Sustainable Production "provides an introduction to the scientific research process and the opportunity to complete an integrated research project relevant to the increasingly complex organic industry. This degree offers more focused coursework and a research project designed to explore the areas of organic and sustainable production. "

"Fulton Farm is an environmental educational facility and working produce farm." Located on the Fulton Center for Sustainability Studies, the farm is USDA Certified Organic and produces crops for the campus and the community. The farm is available to students for coursework, internships, workstudy and volunteer opportunities. Courses offered include agroecology and permaculture. Fulton Farm hosts a "community market share program," and provides workshops, demonstrations, classes and other events for community.

The 1000-acre University Farm or Agricultural Laboratory (UAL) maintains the campus' only organic farm plot and is open to students for education, to student organizations and to volunteers.
