Goal: To develop a more decentralzied and resilient food sytem by training peoplewho can process and retail local fresh protein and processed value added products.Objectives:1. Initiatea one semester certificate program in Artisanal Butchery as a program at Brightwater2. Create a student run retail butchery operation selling fresh protein as well as processed charcuterie items directly to consumers.
