Clostridium Botulinum Detection and Control

Objective

Evaluate the feasibility of using biological competition (biocontrols) and high hydrostatic pressure (HHP) in foods to prevent outgrowth and toxin production by C. botulinum. Evaluate a sensitive ELISA-ELCA system to replace the mouse bioessay for C. botulinum detection. Determine the time-to-toxin production of strains isolated form botulism outbreaks.
