Safety Toxins from Mishandling after Harvest

Objective

To study the formation and fate of biogenic amines in a wide variety of foods in order to develop methods for the detection of potentially harmful amines and to understand the conditions leading to their formation. For seafoods, the approach is to follow decomposition form fresh capture and onboard landings and handling, through documented commercial processing procedures.
