Decontamination of Food: treatment of hides with shellac

Objective

Cattle hides are a major source of contamination of beef during the slaughter process. This project will assess the effectiveness of various aqueous and modified solutions of shellac (a natural edible resin) in immobilising microorganisms on the hair and thus reducing their transfer from hides to meat.
