NOVEL, PLANT-BASED WALL MATERIALS FOR SPRAY-DRY MICROENCAPSULATION: MANUFACTURING, CHARACTERIZATION, AND PERFORMANCE EVALUATION

Objective

The overall goal of this project is to establish su1extracts as a major food ingredient for microencapsulation of hydrophilic and lipophilic food ingredientsThe objectives are:(1) Examine the impact of germination and extraction conditions on the emulsification and wall-forming properties of su1 extracts;(2) Prepare spray-dry microencapsulation (SD-M) solids of model active ingredients, study the impact of formulations and processing conditions on the stability of SD-M solids generated using su1 extracts;(3) Prepare SD-M beet juice-colored ice cream, SD-M paprika oleoresin-colored salad dressing, and SD-M lutein oil-enriched soy milk, and evaluate their sensory qualities; evaluate the in vivo bioavailability of lutein in soy milk.
