Extensive data documenting the rise in global land and sea temperatures have been communicated over the past several decades. Greater clarity regarding the potential importance of anticipated ecological changes will give Maine businesses the opportunity for resilience in the face of a changing landscape. Goals/Objectives of Research 1. Investigate the effect of increasing terrestrial and marine temperatures and changes in weather patterns on food safety risks in Maine-grown foods2. Explore the effects of altered environmental conditions on persistence and processing resistance of foodborne pathogens3. Combat emerging risks though process development4. Screen agricultural products for antimicrobial and antibiotic adjuvant activity
